  • 2 cups shredded low moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, melt mozzarella and cream cheese until combined.
  3. Stir in eggs, almond flour, and baking powder until a dough forms.
  4. Refrigerate the dough for at least 4 hours.
  5. Divide chilled dough into 8 balls and flatten each between parchment paper to about 1/4 inch thick.
  6. Bake for 15–17 minutes until golden brown.
  7. While baking, heat butter and olive oil in a pan; add garlic until fragrant.
  8. Brush garlic butter on baked flatbreads and sprinkle with parmesan; return to oven for an additional minute.
