  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 4 tablespoons fresh basil, chopped
  • 1/2 teaspoon dried thyme
  • 1 cup mozzarella cheese, divided
  • 1/2 cup Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare an 8×8 or 8×11 baking dish with non-stick spray.
  2. In a large bowl, combine zucchini, yellow squash, basil, thyme, garlic powder, mozzarella (reserve half), Parmesan cheese, salt, and pepper. Mix well.
  3. Spread the mixture evenly in the prepared baking dish and bake uncovered for 25-30 minutes.
  4. Remove from oven and sprinkle remaining mozzarella on top; add more Parmesan if desired. Bake for an additional 10-15 minutes until golden brown and bubbly.
