  • 1 pound shrimp, peeled and deveined
  • 2 large Hass avocados, diced
  • 1 (8-ounce) container cherry or grape tomatoes, halved
  • ½ red onion, minced
  • ¼ cup chopped cilantro
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • Mexican hot sauce (to taste)
  • 2 tablespoons salted butter, melted
  • 1 teaspoon lemon zest
  • ½ teaspoon EACH: garlic powder AND sugar
  • 1 tablespoon Mexican hot sauce (sriracha or Louisiana)
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground cumin
  • pinch of cayenne pepper (⅛ – ¼ depending on what you can handle)
  • Salt and pepper to taste
  • 1 jalapeño, seeds and ribs removed and finely minced

Instructions

  1. 1. Marinate shrimp in lemon zest, garlic powder, sugar, hot sauce, and red pepper flakes for at least 10 minutes.
  2. 2. Sauté shrimp in melted butter over medium-high heat until cooked through (about 1 minute per side).
  3. 3. In a mason jar, combine lemon juice, olive oil, cumin, cayenne pepper, salt, and pepper; shake well to mix.
  4. 4. In a large bowl, combine shrimp with avocados, tomatoes, red onion, cilantro, jalapeño; drizzle with dressing and toss gently.
