  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white miso paste
  • 1 teaspoon Worcestershire sauce (or low-sodium tamari)
  • 1 teaspoon anchovy paste
  • 1 garlic clove, grated or minced
  • Cracked black pepper, to taste
  • ⅓ cup neutral oil (such as avocado or grapeseed oil)
  • 4 large flour (burrito-size) tortillas or whole-wheat wraps
  • 2 romaine hearts, chopped (about 8 cups)
  • 1 cup croutons, roughly chopped
  • ¼ cup grated Parmesan cheese

Instructions

  1. Slice chicken breasts in half horizontally for thinner cutlets and season with Parmesan and spices.
  2. Cook chicken in olive oil over medium heat for 7-10 minutes until done.
  3. Whisk together mayonnaise, lemon juice, miso paste, Worcestershire sauce, anchovy paste, garlic, pepper, and oil for the dressing.
  4. Combine chopped romaine, chicken pieces, croutons, and Parmesan in a bowl; toss with dressing.
  5. Assemble wraps by placing salad mixture onto tortillas; fold and roll tightly.
