Ingredients

  • 2 cups heavy cream
  • 1/2 cup unsalted butter
  • 6 cups sugar (divided)
  • 1 1/2 cups chopped walnuts or pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently.
  3. In a separate large saucepan, combine the remaining 4 cups of sugar with heavy cream and simmer on low heat until blended.
  4. Once the smaller saucepan's sugar is melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat and stir in baking soda until incorporated.
  7. Add unsalted butter and vanilla extract; mix until smooth.
  8. Allow to rest for 20 minutes before folding in chopped nuts.
  9. Transfer to the greased baking dish and let cool at room temperature for 1-2 hours or overnight.
