Ingredients
- 2 cups heavy cream
- 1/2 cup unsalted butter
- 6 cups sugar (divided)
- 1 1/2 cups chopped walnuts or pecans
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions
- Lightly grease a 9×13-inch baking dish and set aside.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently.
- In a separate large saucepan, combine the remaining 4 cups of sugar with heavy cream and simmer on low heat until blended.
- Once the smaller saucepan's sugar is melted, pour it into the cream mixture while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat and stir in baking soda until incorporated.
