Ingredients
- 4 skinless boneless chicken thighs
- 200g fresh pineapple chunks
- 1 lime (juice)
- 2 tbsp chipotle paste
- 2 tbsp runny honey
- 1 ripe avocado (cubed)
- Small handful of fresh coriander (chopped)
- Corn or flour tortillas
Instructions
- Preheat your oven to 200°C (400°F).
- In a medium bowl, whisk together the lime juice, chipotle paste, honey, and salt. Add crushed garlic. Toss chicken pieces in the marinade and let sit while the oven preheats.
- Spread marinated chicken and pineapple on a baking tray. Roast for 30 minutes until chicken is cooked through.
- While roasting, chop shallots and cube avocado.
- Once done, remove from oven, squeeze additional lime juice over the mixture, toss with shallots, and serve with tortillas and avocado.
