Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 lime (juice)
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 ripe avocado (cubed)
  • Small handful of fresh coriander (chopped)
  • Corn or flour tortillas

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a medium bowl, whisk together the lime juice, chipotle paste, honey, and salt. Add crushed garlic. Toss chicken pieces in the marinade and let sit while the oven preheats.
  3. Spread marinated chicken and pineapple on a baking tray. Roast for 30 minutes until chicken is cooked through.
  4. While roasting, chop shallots and cube avocado.
  5. Once done, remove from oven, squeeze additional lime juice over the mixture, toss with shallots, and serve with tortillas and avocado.
