  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced

Instructions

  2. Sear salmon in a hot nonstick skillet until golden brown (3-4 minutes each side). Remove from skillet.
  3. Cook onion and garlic in the same skillet until fragrant (about 2 minutes).
  4. Toast orzo for 1 minute before adding chicken broth; simmer until nearly al dente (8 minutes).
  5. Stir in spinach until wilted and mix in lemon juice and Parmesan.
  6. Return salmon to skillet; heat through for an additional 2-3 minutes before serving.
