  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 ½ cups hot vegetable or chicken stock
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, whisk together olive oil, salt, pepper, smoked paprika, thyme, oregano, and garlic granules. Coat the chicken thighs evenly.
  3. In an 8×12-inch baking dish, combine diced onion and minced garlic with hot stock and water. Stir in uncooked rice, salt, and pepper.
  4. Place seasoned chicken on top of the rice mixture.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil, spray chicken lightly with oil and bake uncovered for another 30 minutes. Broil briefly if desired for extra crispiness.
