Ingredients
- 5 bone-in chicken thigh fillets (skin removed)
- 1 onion (chopped)
- 2 large garlic cloves (minced)
- 2 tablespoons butter (or olive oil)
- 1 ½ cups uncooked white rice
- 1 ½ cups hot chicken broth
- 1 ¼ cups hot water
- Chicken rub: paprika, dried thyme, garlic powder, onion powder, salt, black pepper
Instructions
- Preheat the oven to 350°F (180°C).
- In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for 12-15 minutes until softened.
- While baking, mix chicken rub ingredients in a bowl and season both sides of each chicken thigh.
- Remove the baking dish from the oven; stir in uncooked rice over the onion and garlic mixture.
- Place seasoned chicken thighs on top of the rice; pour hot broth and water around them.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil, spray chicken with oil if desired, and bake uncovered for another 20 minutes until golden brown.
- Let rest for 5 minutes before serving; fluff rice with a fork and garnish as desired.
