Ingredients

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup grape or strawberry jelly (or preferred flavor)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until combined.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture until smooth dough forms.
- Scoop about 2 tablespoons of dough, flatten into discs on the baking sheet.
- Place about 1 teaspoon of jelly in the center of half the discs and cover with remaining discs; seal edges tightly.
- Bake for 12-15 minutes until edges are golden brown.
- Allow cooling for five minutes on the sheet before transferring to a wire rack.
