Ingredients

Scale
  • 4 steaks (1/2- to 1-pound each)
  • Kosher salt
  • 2 tablespoons olive oil
  • 3 tablespoons cracked black peppercorns
  • 1/4 cup shallots
  • 1/4 cup cognac
  • 1 cup beef broth
  • 1/4 cup heavy cream
  • Fresh parsley

Instructions

  1. Salt the steaks generously and let them rest at room temperature for 30 minutes.
  2. Heat olive oil in a cast iron skillet over high heat until smoking. Pat the steaks dry and sear for about 4 minutes on one side until browned.
  3. Flip the steaks and reduce heat slightly, cooking until they reach desired doneness (120°F for rare to 155°F for medium well).
  4. Transfer cooked steaks to a baking sheet and sprinkle with crushed peppercorns.
  5. In the same skillet, sauté shallots, then add cognac to deglaze. Stir in beef broth, boil until reduced by half, then add cream and simmer until thickened.
  6. Mix in parsley before serving the sauce over the steaks.
