  • 1 lb boneless, skinless chicken thighs
  • 1 cup tortellini (uncooked)
  • ½ cup sun-dried tomatoes
  • 1 lb asparagus
  • 1 cup cherry tomatoes
  • ¼ cup basil pesto
  • Olive oil and salt

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced chicken thighs seasoned with salt and sun-dried tomatoes; cook for 5-10 minutes until fully cooked. Remove from skillet.
  2. In the same skillet, add asparagus seasoned with salt and remaining sun-dried tomatoes; sauté for about 5-10 minutes until tender-crisp. Set aside.
  3. Cook tortellini according to package instructions; drain and set aside.
  4. Return chicken to the skillet, add basil pesto and stir to coat evenly over low-medium heat for 1-2 minutes. Add cooked tortellini and halved cherry tomatoes; combine well.
  5. Serve warm garnished with additional basil if desired.
