- 4 cups cooked brown or white rice
- 1 lb boneless, skinless chicken thighs
- 3 tablespoons coconut oil
- ½ yellow onion
- ½ green bell pepper
- ½ red bell pepper
- 1 large garlic clove
- 1-inch piece fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 ½ cups cubed pineapple
- ¾ cup frozen peas
- Juice of 1 small lime
Instructions
- Season chicken with salt and let sit for 10 minutes.
- Heat 2 tablespoons of coconut oil in a large skillet over medium heat; cook chicken until no longer pink (5-7 minutes). Remove chicken and set aside.
- In the same skillet, melt remaining coconut oil; sauté onion for 3-4 minutes, then add bell peppers, garlic, and ginger; cook another 2-3 minutes.
- Deglaze the pan with soy sauce.
- Stir in rice, honey, pineapple, and cooked chicken; reduce heat and cook for about 5 minutes until heated through.
- Add peas and lime juice in the last few minutes of cooking.
- Serve garnished with green onions and sesame seeds if desired.
