  • Sea salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons fresh rosemary
  • 1 teaspoon fresh thyme
  • 8 cloves garlic, minced
  • 1/4 cup olive oil

Instructions

  1. Bring the prime rib to room temperature by removing it from the refrigerator one hour before cooking. Season generously with salt and cover loosely with plastic wrap.
  2. Preheat your oven to 500°F (260°C) and adjust the oven racks for centering the roast.
  3. In a bowl, combine salt, black pepper, rosemary, thyme, garlic, and olive oil into a seasoning mixture.
  4. Pat the roast dry and rub the seasoning all over it.
  5. Place the roast in a roasting pan (bones down for bone-in) and bake at 500°F for 15 minutes. Reduce to 325°F (163°C) and cook until desired doneness is reached (use a meat thermometer).
  6. Remove from the oven when about 5-10 degrees below target temperature. Let rest under foil for 30 minutes before slicing against the grain.
