  • 8 oz cream cheese
  • 8 oz butter
  • 1 tablespoon vanilla extract for frosting
  • 1/2 teaspoon salt for frosting
  • 7 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. In a large bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Divide the batter evenly among the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. For the salted caramel sauce: Melt sugar in a saucepan until golden brown; stir in butter and then heavy cream carefully.
  7. For the frosting: Beat cream cheese and butter until fluffy; add vanilla extract, salt, and powdered sugar until smooth.
  8. Once cooled, layer the cake with frosting between layers and cover the whole cake in frosting; drizzle salted caramel on top.
