  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, minced
  • Fresh thyme and rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels for crispy skin.
  3. In a bowl, mix olive oil, garlic, herbs, orange zest and juice, honey, soy sauce, salt, and pepper.
  4. Coat the chicken thoroughly with the marinade.
  5. Place quartered onions inside the cavity for added flavor.
  6. Place chicken in a roasting pan and pour chicken broth around it.
  7. Roast for approximately 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10-15 minutes before carving.
