  • 2 large celery stalks, chopped

  • 1 rotisserie chicken, shredded
  • 8 cups lower-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups uncooked wide egg noodles
  • Optional: Chopped fresh parsley for garnish

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Add onion, carrots, celery, and garlic; sauté for about 8 minutes until softened.
  2. Stir in shredded rotisserie chicken and chicken broth; season with Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to medium and simmer for about 6 minutes.
  3. Add uncooked egg noodles and continue to simmer on medium-low for another 6 minutes or until noodles are tender.
