  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large Vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko bread crumbs, tomato paste, Worcestershire sauce, onion powder, pepper, and salt. Form into four oval patties.
  2. Heat olive oil in a skillet over medium heat; cook patties until browned on both sides and cooked through. Remove and keep warm.
  3. In the same skillet, add onions and mushrooms; sauté until softened. Stir in thyme and flour for about a minute.
  4. Gradually add beef stock while scraping up brown bits; bring to a boil then reduce heat. Add butter and season with salt and pepper.
  5. Return patties to the skillet; simmer in gravy for an additional 5–7 minutes.
  6. Serve garnished with fresh parsley or chives.
