  • 1 lb sausage (your choice), sliced
  • 4 medium potatoes, peeled and cubed
  • 1 cup asparagus, chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sear the sliced sausage for about 5–7 minutes until browned. Remove and set aside.
  3. In the same skillet, sauté cubed potatoes for 8–10 minutes until lightly browned. Add diced onion and minced garlic; cook for another 3–4 minutes until translucent.
  4. Layer the sautéed potatoes, onion-garlic mix, chopped asparagus in the baking dish, seasoning with thyme, salt, and pepper.
  5. Pour broth over the mixture and top with seared sausage slices.
  6. Cover with foil and bake for 40–45 minutes until potatoes are tender.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted.
