Ingredients
- 1 lb sausage (your choice), sliced
- 4 medium potatoes, peeled and cubed
- 1 cup asparagus, chopped
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup chicken or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sear the sliced sausage for about 5–7 minutes until browned. Remove and set aside.
- In the same skillet, sauté cubed potatoes for 8–10 minutes until lightly browned. Add diced onion and minced garlic; cook for another 3–4 minutes until translucent.
- Layer the sautéed potatoes, onion-garlic mix, chopped asparagus in the baking dish, seasoning with thyme, salt, and pepper.
- Pour broth over the mixture and top with seared sausage slices.
- Cover with foil and bake for 40–45 minutes until potatoes are tender.
- Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted.
