Description

Sesame Cucumber Salad is a vibrant, refreshing dish that seamlessly combines crunchy cucumbers with a tantalizing sesame dressing. This quick and easy recipe is perfect for summer barbecues, light lunches, or as a healthy side dish. With just a handful of fresh ingredients, this salad offers a delightful balance of flavors and textures—crisp cucumbers, savory sesame oil, and a hint of spice. It’s not only delicious but also vegan-friendly and packed with nutrients, making it an ideal choice for anyone looking to enjoy a healthy meal.

Ingredients

  • Mini Persian cucumbers
  • Kosher salt
  • Garlic
  • Sugar
  • Soy sauce
  • Rice wine vinegar
  • Fish sauce (or substitute)
  • Toasted sesame oil
  • Chili paste
  • Sesame seeds

Instructions

  1. Slice the cucumbers using a rolling cut technique. Place in a bowl, sprinkle with kosher salt, and let sit for 30 minutes to draw out excess water.
  2. Drain the cucumbers using a colander and rinse off any remaining salt.
  3. In the same bowl, combine minced garlic, sugar, soy sauce, rice wine vinegar, fish sauce (if using), toasted sesame oil, chili paste, and sesame seeds. Mix well.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
