- 1–2 ripe avocados
- 1 large ripe mango
- 1/4 cup diced red onion
- Juice of 1 lime
- 2 cups cooked rice or quinoa
- Greek yogurt (for lime-chili sauce)
- 1 tsp chili powder
- Salt and pepper to taste
- 1 small jalapeño (optional)
- 1–2 tbsp chopped fresh cilantro
- 1/4 cup plain Greek yogurt
- 1 tbsp mayonnaise (optional)
- Zest and juice of 1 lime
- 1 tsp honey or agave
- Fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the Mango Salsa: In a bowl, combine diced mango, red onion, jalapeño (if desired), lime juice, cilantro, and salt. Mix well and refrigerate.
- Make the Lime-Chili Sauce: Whisk together Greek yogurt, lime zest and juice, honey, salt, and pepper in another bowl. Set aside.
- Cook the Shrimp: Pat dry and season shrimp with chili powder, salt, and pepper. Heat oil in a grill pan over medium-high heat and cook shrimp for 2–3 minutes on each side until pink.
- Assemble the Bowls: Layer cooked rice or quinoa at the bottom of each bowl, top with grilled shrimp, sliced avocado, and mango salsa.
- Drizzle with Lime-Chili Sauce: Garnish with chopped cilantro and serve immediately.
