- 1 cup celery (finely diced)

Instructions
- Boil salted water in a medium pot. Add quartered lemon.
- In a bowl of ice water nearby, cook shrimp in boiling water for 2-3 minutes until pink and opaque.
- Drain shrimp and transfer to the ice bath to stop cooking.
