  • 1 pound shrimp (peeled and deveined)
  • 1 cup celery (finely diced)
  • 1/2 red onion (finely minced)
  • 2 cloves garlic (minced)
  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • Fresh dill (chopped, plus more for garnish)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a medium pot. Add quartered lemon.
  2. In a bowl of ice water nearby, cook shrimp in boiling water for 2-3 minutes until pink and opaque.
  3. Drain shrimp and transfer to the ice bath to stop cooking.
  4. In a small bowl, mix together the dressing ingredients: lemon juice, garlic, mayonnaise, Dijon mustard, and dill.
  5. Combine shrimp with celery and red onion in a salad bowl. Pour dressing over and toss gently.
  6. Season with salt and pepper to taste. Refrigerate for several hours before serving.
