  • 2 medium zucchinis (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced)
  • Olive oil or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp garlic (minced)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add the sliced sausage and sauté until browned (about 3-5 minutes). Remove from pan.
  3. In the same skillet, reduce heat to medium and add remaining oil along with zucchini, onion, and bell pepper. Season with garlic powder, oregano, basil, onion powder, salt, and pepper.
  4. Sauté until vegetables are tender (about 5 minutes).
  5. Return the sausage to the skillet along with minced garlic. Stir to combine and cover for a few minutes to meld flavors.
