  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes (1 pound)
  • 3 cups chicken broth
  • 1 bay leaf
  • ½ cup milk
  • 1 cup frozen green peas

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper, then sear until browned (4–5 minutes).
  2. Transfer seared chicken to the slow cooker. Sprinkle with flour, thyme, rosemary, and salt; stir to coat.
  3. Add garlic, onion, carrots, potatoes, and chicken broth to the slow cooker. Include the bay leaf.
  4. Cover and cook on low for 7–8 hours or high for 3–4 hours.
  5. About 10–15 minutes before serving, stir in frozen peas and milk; adjust seasoning as needed.
