  • 1 cup kalamata olives
  • ½ cup feta cheese (optional)
  • 1 jar (12 ounces) roasted red peppers
  • 1 medium red onion
  • 3 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme leaves

Instructions

  1. Coat the slow cooker with nonstick spray. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then brown on both sides for about 2 minutes each.
  2. Place browned chicken in the slow cooker. Arrange roasted red peppers, olives, and onion around the chicken.
  3. In a bowl, whisk together garlic, honey, red wine vinegar, oregano, and thyme; pour over chicken.
  4. Cover and cook on high for 1.5 to 2 hours or low for 3 to 4 hours until chicken reaches an internal temperature of 165°F.
