  • 2 1/2 lbs baby creamer potatoes (halved)
  • 1 1/2 lbs beef smoked sausage (sliced into 1-inch pieces)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 Tbsp olive oil
  • 2 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 4 Tbsp butter (cubed)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 baking dish with nonstick spray.
  2. In a large bowl, toss halved potatoes with olive oil and seasonings until evenly coated.
  3. Add sliced sausage, diced onion, and green bell pepper to the bowl; mix gently until combined.
  4. Pour the mixture into the prepared baking dish and dot the top with cubed butter.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until potatoes are fork-tender.
  6. Allow to rest for five minutes before serving hot.
