Ingredients

  • 1 lb Italian sausage
  • 4 oz Mozzarella cheese
  • 4 oz Cream cheese
  • 12 Manicotti shells
  • 1 lb Bacon
  • Barbecue rub to taste
  • Barbecue sauce for serving

Instructions

  1. Allow cream cheese to reach room temperature. Shred mozzarella and set aside.
  2. In a large bowl, mix together Italian sausage, cream cheese, mozzarella, and barbecue rub until well combined.
  3. Fill a disposable piping bag with the mixture and pipe it into each manicotti shell halfway, then fill the other half.
  4. Wrap each filled shell tightly with bacon to cover completely.
  5. Place wrapped shells on a wire rack over a sheet pan and season generously with more barbecue rub. Let rest for at least four hours.
  6. Preheat smoker to 250°F. Smoke the shells for one hour, turning halfway through.
  7. Increase heat to 350°F for an additional 15 minutes to crisp the bacon. Brush with barbecue sauce and cook for another 15 minutes.
  8. Remove from smoker and let rest before serving.
