- 12 full-size graham crackers
- 6 tablespoons unsalted butter
- ½ cup vegetable oil
- 1 cup sugar
- 2 large eggs
- ½ cup cocoa powder
- ½ cup all-purpose flour
- 2 heaping cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan with parchment paper.
- In a food processor, blend graham crackers with sugar until fine crumbs form. Mix in melted butter and press into the pan to form the crust. Bake for 15-20 minutes until golden brown.
- In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla until combined. Add cocoa powder, flour, salt, and baking powder; mix until smooth. Fold in chocolate chips.
- Pour brownie batter over the cooled crust and bake for another 30-40 minutes until set.
- Switch to broil mode; sprinkle marshmallows on top and broil for about 2 minutes or until golden brown.
- Allow to cool for at least 30 minutes before cutting.
