  • 3/4 cup sourdough discard
  • 3/4 cup water
  • 3 tablespoons honey
  • 6 tablespoons butter (melted)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons butter (melted) for filling
  • 1/2 cup brown sugar for filling
  • 1 tablespoon cinnamon for filling
  • 1 cup powdered sugar for frosting
  • 4 oz cream cheese (preferably full fat) for frosting
  • 2 tablespoons butter for frosting
  • 2 tablespoons cream (milk or half and half) for frosting

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine melted butter, brown sugar, and cinnamon for the filling; set aside.
  3. In a large mixing bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Stir in honey, melted butter, water, and sourdough discard until combined into a soft dough.
  5. Knead for about five minutes until smooth.
  6. Roll out the dough into an even rectangle (1/4 to 1/2 inch thick).
  7. Spread the cinnamon filling evenly over the dough.
  8. Roll tightly from one long side and slice into 12 equal pieces.
  9. Arrange sliced rolls in a baking dish or cast iron skillet.
  10. Bake for 25–35 minutes until golden brown; cool slightly before frosting.
