  • 4 romaine leaves
  • 1 cup shredded cabbage
  • 2 carrots, shredded
  • 1/2 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 avocado, thinly sliced
  • 1/2 cup fresh cilantro
  • 1/3 cup peanut butter
  • 2 tablespoons tamari (gluten-free soy sauce)
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon sriracha
  • 1 tablespoon fresh ginger, minced
  • 1 garlic clove, minced

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, tamari, lime juice, maple syrup, sriracha, minced ginger, and garlic in a bowl until smooth. Adjust consistency with water if necessary.
  2. Soak one rice paper sheet in warm water until pliable. Lay it flat on a towel.
  3. Place romaine lettuce at the bottom of the rice paper and layer with cabbage, carrots, cucumber, bell pepper, avocado, and cilantro.
  4. Roll tightly from the bottom up while folding in the sides to secure the fillings.
  5. Repeat with remaining ingredients. Serve immediately with peanut dipping sauce.
