  • 2 packages cream cheese (8 ounces each)
  • 2 large eggs
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 cups fresh strawberries (diced)
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar (packed)
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press firmly into the bottom of the baking dish.
  3. In another bowl, beat cream cheese, eggs, sugar, vanilla extract, and salt until smooth. Spread over the crust.
  4. Top with diced strawberries and sprinkle crumble topping made from flour, brown sugar, salt, and melted butter.
  5. Bake for 35-40 minutes until set in the center. Cool for an hour at room temperature then chill in the refrigerator for another hour before serving.
