Ingredients

- 1 1/2 cups uncooked millet
- 1/3 – 1/2 cup sliced black olives
- 1/2 cup capers
- 1/2 cucumber, diced
- 2 spring onions, sliced
- 1 small red pepper, diced
- Juice of 1 lemon
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- Salt
- Black pepper
Instructions
- Rinse millet under cold water and bring 4 1/2 cups of water to a boil in a pot.
- Add millet to boiling water; cook for about 20 minutes until tender. Drain and cool.
- While millet cools, chop cucumbers, spring onions, and red pepper.
- In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.
- In a large bowl, combine cooled millet with chopped vegetables and dressing; mix well.
- Chill in the fridge before serving.
