Ingredients

  • 1 1/2 cups uncooked millet
  • 1/31/2 cup sliced black olives
  • 1/2 cup capers
  • 1/2 cucumber, diced
  • 2 spring onions, sliced
  • 1 small red pepper, diced
  • Juice of 1 lemon
  • 2 tsp dijon mustard
  • 2 tbsp apple cider vinegar
  • Salt
  • Black pepper

Instructions

  1. Rinse millet under cold water and bring 4 1/2 cups of water to a boil in a pot.
  2. Add millet to boiling water; cook for about 20 minutes until tender. Drain and cool.
  3. While millet cools, chop cucumbers, spring onions, and red pepper.
  4. In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.
  5. In a large bowl, combine cooled millet with chopped vegetables and dressing; mix well.
  6. Chill in the fridge before serving.
