  • 0.751 lb chicken breasts, cubed
  • 1 Tbsp corn starch
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ½ tsp red pepper flakes
  • 1 small red bell pepper
  • 1 small orange bell pepper
  • 1 jalapeño, sliced
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • ¾ cup sweet chili sauce
  • 12 Tbsp honey
  • 1 lime, sliced
  • 3 Tbsp green onions, chopped

Instructions

  1. Preheat oven to 375ºF.
  2. In a large mixing bowl, combine chicken cubes with corn starch, black pepper, salt, and red pepper flakes.
  3. Drizzle olive oil on a baking sheet and arrange the seasoned chicken evenly. Add bell peppers and jalapeños around the chicken.
  4. Bake for about 20 minutes until the chicken reaches an internal temperature of 165ºF.
  5. While chicken bakes, melt butter in a saucepan over medium heat; add ginger and garlic, cooking for about one minute. Stir in sweet chili sauce and honey; simmer briefly.
  6. Pour the sauce over the baked chicken and mix thoroughly before serving.
