  • 2 cups mashed sweet potato (about 34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate frosting (for topping)

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9 or 10-inch cake pan.
