  • 1 onion (diced)
  • 1 pod garlic (diced)
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 cup long-grain rice
  • ¼ cup cilantro (for rice)
  • 2 tablespoons lime juice (for rice)
  • Romaine lettuce, corn, black beans, avocado (optional toppings)

Instructions

  1. In a skillet over medium heat, sauté diced onion and garlic until translucent. Add ground turkey and cook until browned. Stir in spices, tomato sauce, and water; simmer for 10 minutes.
  2. In a pot or rice cooker, boil water. Add rice and salt; cover and cook until fluffy. Stir in vegan butter, cilantro, and lime juice once done.
