  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles
  • 1 1/2 cups beef broth
  • 3 tbsp tomato paste
  • 3 oz cream cheese (softened)
  • 12 oz spaghetti (cooked al dente)
  • 1 1/2 cups shredded cheese (cheddar/Mexican blend)

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a skillet, heat olive oil or butter and sauté onion for about 3-4 minutes until soft. Add garlic and cook for an additional minute.
  3. Add ground beef to the skillet and cook until browned, about 5-7 minutes; drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and cream cheese. Cook for 2-3 minutes until the cream cheese melts.
  5. Remove from heat and mix the cooked spaghetti with the sauce mixture and shredded cheese until well coated.
  6. Garnish with cilantro if desired and serve warm.
