- 1 ½ lbs 92% lean ground chicken or turkey
- 5 green onions (sliced)
- 1 red bell pepper (diced)
- 1 ½ cups matchstick carrots
- 3 Tbsp low-sodium soy sauce
- 2 Tbsp fish sauce
- 2 Tbsp lime juice
- Lettuce leaves (for wrapping)
Instructions
- In a mixing bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and cornstarch to create the sauce mixture.
- Heat olive oil in a non-stick skillet over medium-high heat. Sauté the lighter parts of green onions, garlic, and ginger until fragrant (about 30 seconds).
- Add ground chicken to the skillet and cook until almost done. Do not drain excess liquid.
- Stir in diced red bell pepper and matchstick carrots; cook for an additional two minutes.
- Pour in the prepared sauce and continue cooking until thickened and chicken is fully cooked (about one minute). Stir in cilantro and green onion greens before serving.
