  • 1 pound skinless, boneless chicken breasts
  • ½ cup creamy peanut butter
  • ¼ cup hot water
  • 2 tablespoons Thai red curry paste
  • 2 tablespoons palm sugar or light brown sugar
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon freshly squeezed lime juice (from 1 lime)
  • 1 teaspoon finely minced garlic
  • ½ teaspoon red pepper flakes
  • 2 scallions, thinly sliced
  • 1 stalk lemongrass, roughly chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1 tablespoon freshly squeezed lime juice (from 1 lime)
  • 2 teaspoons freshly minced garlic (about 2 medium cloves)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Make the peanut sauce: In a medium bowl, mix peanut butter with hot water until smooth. Stir in curry paste, palm sugar, Sriracha, soy sauce, rice vinegar, lime juice, minced garlic, red pepper flakes, and sliced scallions. Adjust salt to taste.
  2. Marinate the chicken: Blend lemongrass, oil, fish sauce, sugar, lime juice, soy sauce, minced garlic, turmeric, coriander, and Sriracha until smooth. Combine with chicken in a resealable bag and refrigerate for 1-2 hours.
  3. Prepare the grill: Preheat your grill and clean the grate.
  4. Grill the chicken: Thread marinated chicken onto soaked skewers and grill for about 3 minutes per side until cooked through.
  5. Serve warm with peanut dipping sauce.
