  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded (rotisserie or leftover)
  • 1 cup sour cream or plain Greek yogurt

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sauté chopped onion for 3–5 minutes until softened; add minced garlic and cook for an additional 30 seconds.
  2. Stir in chicken broth, diced green chilies, cumin, cayenne pepper, oregano, paprika, lime juice; season with salt and pepper.
  3. Drain and rinse the beans; blend one ladleful with a splash of broth if you prefer creaminess.
  4. Add pureed beans (if using), whole beans, and corn to the pot. Bring to a simmer and cook uncovered for 15 to 30 minutes.
  5. Remove from heat; stir in sour cream (or Greek yogurt) along with shredded chicken.
  6. Serve hot with desired toppings.
