Ingredients

  • 2 x 5oz cans of drained tuna
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil (divided)
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella cheese. Season with salt and pepper; mix well.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Spread butter on one side of a slice of bread and place it in the skillet.
  3. Top the bread with about 2 tablespoons of the tuna mixture. Butter another slice of bread on one side and place it on top (buttered side up).
  4. Cook until the bottom slice is golden brown; flip carefully using a spatula to toast the other side until golden.
