- 2 x 5oz cans of drained tuna
- 1 medium onion, chopped
- 1/2 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil (divided)
- 1/3 cup shredded mozzarella cheese
- Sliced bread (your choice)
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, and mozzarella cheese. Season with salt and pepper; mix well.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Spread butter on one side of a slice of bread and place it in the skillet.
- Top the bread with about 2 tablespoons of the tuna mixture. Butter another slice of bread on one side and place it on top (buttered side up).
- Cook until the bottom slice is golden brown; flip carefully using a spatula to toast the other side until golden.
