- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach
- 1/2 cup chicken broth (or vegetable broth)
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil water in a large pot with salt, add the pasta and cook until al dente. Drain and set aside.
- Sauté garlic and shrimp: In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for about 30 seconds before adding shrimp. Cook until shrimp are pink and opaque (3–5 minutes).
- Add tomatoes and spinach: Stir in halved cherry tomatoes, salt, black pepper, and optional red pepper flakes; cook for 3–4 minutes until tomatoes soften. Add fresh spinach and wilt down.
- Combine everything: Pour in chicken broth, stir well, then add cooked pasta to the skillet; toss until well combined.
- Serve: Remove from heat, serve immediately topped with grated Parmesan cheese and fresh basil if desired.
