  • 3 cups mixed berries (blueberries, raspberries, strawberries)
  • 16 ounces cream cheese
  • 3/4 cup granulated sugar
  • Juice of 1 medium lemon
  • 1 cup heavy cream
  • 1 & 3/4 cups graham cracker crumbs
  • 5 tablespoons unsalted butter

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing into the bottom of a springform pan. Chill while preparing the filling.
  2. Blend the berries with 3 tablespoons of sugar until combined.
  3. Beat cream cheese with remaining sugar and lemon juice until smooth. Add berry mixture and combine well.
  4. Whip heavy cream until soft peaks form; gently fold into the cream cheese mixture.
  5. Pour the filling over the chilled crust and spread evenly.
  6. Cover loosely and refrigerate for at least 8 hours or overnight before serving.
