  • 3/4 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 28 Oreo cookies
  • 6 oz dark chocolate
  • 1 cup granulated sugar
  • 2 large eggs (for brownie layer)
  • 1/4 cup cocoa powder

Instructions

  1. Preheat your oven to 350F (180C) and grease a 9×13 inch baking pan lined with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, white sugar, egg, egg yolk, and vanilla until smooth. Gradually mix in the flour until combined, then fold in chocolate chips.
  3. Spread half of the cookie dough into the prepared pan and layer with Oreo cookies.
  4. In another bowl, melt dark chocolate with cubed butter until smooth. Stir in granulated sugar and let cool slightly before adding eggs one by one. Mix in flour, cocoa powder, and salt until just combined.
  5. Pour brownie batter over Oreos and spread evenly. Bake for about 50 minutes or until a toothpick inserted comes out mostly clean.
  6. Let cool completely before slicing into squares.
