  • 150 g full-fat sour cream (room temperature)
  • 2 tbsp vegetable oil
  • 1½ tsp vanilla extract
  • ½ tsp vanilla bean paste
  • 200 g butter (for frosting)
  • 330 g powdered sugar (sifted)
  • 1 tsp vanilla paste
  • 1 tbsp whole milk (room temperature)

Instructions

  1. Preheat the oven to 160°C (320°F) and line a cupcake pan with liners.
  2. Sift together flour, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer, cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Gradually mix in dry ingredients alternately with sour cream, oil, vanilla extract, and vanilla bean paste.
  5. Fold the batter gently and divide it among the cupcake liners.
  6. Bake for 20–22 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. For frosting: Beat room temperature butter until creamy; gradually add sifted powdered sugar, vanilla paste, and milk until smooth.
  8. Frost cooled cupcakes as desired.
