  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 (8 oz) package Neufchatel cheese
  • 1 ¼ cups corn (fresh or frozen)
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 ½ cups shredded cooked rotisserie chicken
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large pot over medium-high heat, heat olive oil. Sauté the diced onion for about 4 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  2. Pour in the chicken broth and diced green chilies. Stir in cumin, paprika, oregano, coriander, cayenne pepper, salt, and pepper. Bring to a boil; reduce heat to medium-low and let simmer for 15 minutes.
  3. Optionally puree one cup of beans with a bit of broth until smooth for added creaminess.
  4. Add Neufchatel cheese, corn, whole beans, and pureed beans to the pot; stir until cheese is melted.
  5. Mix in shredded chicken and lime juice; taste and adjust seasoning if necessary.
